3 Quarantine Tips
I am a stay at home, homeschooling mother so most of my days look very much like this quarantine. I have learned a few tricks to help the days go by and make food last. Here are the top three:
If you need a moment to yourself and have children that are old enough and mature enough to sit in the tub alone do it! Having your children take a bath can give you about 30 minutes of peace. If you just need to eat, cook, scroll social media it will give you a child free minute to do that. Now I will say if your child is anything like my children this won’t always work. But I will say more often than not it will.
If you want something sweet but can’t get to the store look around the house and see if you have 1 cup of peanut butter, 1 egg, and 1 cup of sugar. If you do you can make some bomb peanut butter cookies. Bake them for about 10 minutes at 350 degrees. Quick and easy. Just make sure to press them flat on the cookie sheet before placing them in the oven.
If you want a calzone but can’t get to the pizza shop make your own. Hashim’s favorite is buffalo chicken. Boil skinless boneless chicken breast. Once done drain it and shred it with two forks. In a skillet add some olive oil the shredded chicken and sauce we use buffalo sauce for the kids I use tomato sauce. If you have pizza dough you can use that or Biscuit dough also works. Roll it out flat I make a rectangle shape. Brush the dough with olive oil and sprinkle shredded mozzarella cheese on top. Add the chicken. Then add some more cheese. Fold the dough in half over the filling. Pinch all around to seal it. Brush olive oil on top and bake in the oven at 375 for 20 minutes.
